Algae in race for planet-friendly milk-analogue powder
Proteins are vital components of the human diet. In addition to animal protein, algae and plant proteins are interesting alternatives. Indeed, efforts to reduce consumption of animal products are good for the environment since they can reduce greenhouse gas emissions. With the support of the Marie Skłodowska-Curie Actions programme, the ALGAPOW project will explore algae-based powder as a substitute for traditional dairy powder. It will investigate how the formula and physical characteristics of algae-based initial liquid feed influence the development of powder structure during spray-drying and the consequences on the final powder properties. The impact of the spray-drying protocol on the rehydration profile of the powder will be considered for the sustainable production of quality powders.
